Bibingka is a Filipino delicacy almost synonymous with the Christmas season.
It’s made with rice flour, coconut milk, sugar, and eggs and is typically cooked in banana leaves.
In 2023, the “Encyclopedic of Flavors” publication TasteAtlas named bibingka as one of the 100 best cakes in the world, ranking 16th with a rating of 4.4 stars.
While bibingka is best enjoyed in its authentic form, this Christmas season, why not take it up a notch by trying out bibingka in a cheesecake form? Here are five food establishments that offer them.
1. Bo’s Coffee
Bo’s Coffee, a homegrown coffee shop, has launched a “Paskong Pinoy” menu for the Christmas season, available for a limited time only. Among its unique offerings is the bibingka cheesecake (P2,100), a creative twist on the traditional Filipino rice cake.
2. Wildflour Café + Bakery
