In a cozy corner of Makati’s Salcedo Village, Singapore’s Butcher Boy made a striking entrance into the Manila dining scene this week with a simple and straightforward menu.
According to founder Chef Andrew Walsh, the menu is inspired by his experiences living in Asia for the past decade or so.
“I love baos, I love dumplings, and here, there is something of a memory from traveling around Asia, whether it’s Hong Kong, Malaysia, Japan and all those influences,” he tells GMA News Online on opening day this week. He adds the Philippines is represented in his menu with the hefty pork ribs adobo that’s topped with chicharon and garlic crumbs.
In the menu are items like the zesty Prawn and Chicken Laksa Dumplings, the filing Fried Chicken Bao, and the Salmon Tostitos, which are all great for sharing after-hours. But even heavier entrees feel like they’re best enjoyed, casually by hand.
Take the steak for instance. Served with lettuce, a couple of sauces, and white rice on the side, the meat is best eaten as a wrap, where a variety of flavors and textures explode like a splendid song.
It’s easy to say Butcher Boy is the perfect stop for after-hours drunken fare and it won’t be wrong. In fact, Chew Andrew said Butcher Boy is exactly the kind of place where “I wanna go when I’m off, after work and I don’t want to think.”
“I love that style of eating,” adds the chef, who earned a Michelin star in 2019.
But the casual and communal style at Butcher Boy, not to mention the creative and well-balanced cocktails on offer and the fun playlist made by a staffer, all make a visit to Butcher Boy quite the party.
Butcher Boy plans to open for lunch, and with the handsome espresso machine already on display at the bar, it’s looking like brunch operations are not far behind.
